Getting a Grip...Again

Well, if you read my earlier post, you know that I had a rough time last night at a Christmas party, ate WAY WAY WAY too much, and ended up not feeling so good and then as a result, didn't sleep so good.

Feeling much better today, back in control and trying to stay focused on the task at hand, which is to eat healthy so I can feel good and work, work, work.  I need to finish this job so that I can get out and finish the shopping tomorrow afternoon.  Only a few things, but a lot to squeeze into a day.

So had a very light breakfast, eggwhites with spinach and cabot cheese, and two slices of Pepperidge Farm "very think bread".  I forget what it's actually called.  A light lunch which featured leftover salad from last night (okay, and a cup of the pasta and clam sauce from last night).  The star of the day was dinner, my creation of "Greens and Beans".

Maybe not the best picture.  I could have plated it and then taken the picture, but I was in a hurry.  Basically, it's sauteed swiss chard and onions in a little olive oil, some greens seasoning, a tiny splash of white wine.  when the chard was cooked down, I added a can of canellini beans and 2 cups of cooked whole wheat pasta.  Yum!  And great comfort food!

Could easily have had this without the pasta.  In fact, I think we're doing a repeat of it Monday night without the pasta.

So now it's back to work if I can keep the eyes open and early to bed.

  1. Ugh, Reen. I think we're all feeling the holiday indulgence. You are not alone! I love that you got right back to healthy eats! The greens and beans is right up my alley! YUM!

  2. Yeah. The jeans are definitely tighter. Not looking forward to weigh-in tomorrow, but, you know, if I can just hold on... I'll be okay.

Just got home and put groceries away. It's 7:00 p.m. Been going since 5:30 a.m. again. So you know what I had for dinner? Yep, greens and beans. So good!
