In the Pan

This morning I headed to the kitchen for my usual protein packed breakfast.  The result was:




I couldn't make up my mind whether to use leftover sauteed swiss chard (with onions and garlic, of course) or roasted butternut squash, so I chose both, along with shredded carrots and mushrooms for a little more veggie action, eggbeaters, fat-free feta cheese and a slice of naturally slender american cheese.  Made a huge omelet for a total PP value of ...drum roll please .... ONLY 5 points!  I counted a point for the swiss chard because of the olive oil it was sauteed in.

So I'm curious, what do you put in your omelet?  I tend to go with whatever is leftover in the fridge, the usual veggies, carrots, onion, peppers, and sometimes even a little salsa is great in an omelet.
