I've been craving Subway this week, but I have neither the time nor the extra $$$ to go out for lunch. Luckily, hubby picked up some beautiful rolls and turkey breast at the store this morning. I have plenty of fresh veggies hanging around. So I decided to make my own sandwich:
Roll - 5 PP
Turkey Breast, 2oz. - 1 PP
Hellman's Low-Fat Mayo - 1 PP
Smart Beat Cheese - 1 PP
Light Balsamic Dressing - 1 PP
Free veggies - lettuce, spinach, tomato, red onion, green pepper and mined radish.
Salt, Pepper and Oregano
The result - Fabulous! Great filling sandwich for lunch (9 PP) plus a side of grapes.
Going to be a busy work day and evening. So for dinner tonight, I grabbed a container of ham and bean soup out of the freezer. Soup and salad makes for an easy and filling dinner.
