I've been craving Subway this week, but I have neither the time nor the extra $$$ to go out for lunch. Luckily, hubby picked up some beautiful rolls and turkey breast at the store this morning. I have plenty of fresh veggies hanging around. So I decided to make my own sandwich:
Roll - 5 PP
Turkey Breast, 2oz. - 1 PP
Hellman's Low-Fat Mayo - 1 PP
Smart Beat Cheese - 1 PP
Light Balsamic Dressing - 1 PP
Free veggies - lettuce, spinach, tomato, red onion, green pepper and mined radish.
Salt, Pepper and Oregano
The result - Fabulous! Great filling sandwich for lunch (9 PP) plus a side of grapes.
Going to be a busy work day and evening. So for dinner tonight, I grabbed a container of ham and bean soup out of the freezer. Soup and salad makes for an easy and filling dinner.

Carla, I found Subway as a way to have a sub once in a while and still feel like I was in control of what was on it.
ReplyDeleteOf course, now I've found that it's much easier to make at home and have even more control of what's on it. With all the fresh produce that's always around, I may even start making veggie subs, no meat. In fact, I have a few ingredients in my mind right now that I want to put on my next sub, avocado, spinach, roasted peppers....
