So I brought the crock pot out a few weeks ago and have used it several times already. I've made chili, pasta sauce, pork roast with sauerkraut, butternut squash, and meatloaf. Anything that makes the day a little easier is a plus for me.
What I've learned that obviously, Large Crock Pot equals bigger quantities, a lot of food for two people....BUT there's leftovers, which make those busy days during the week so much easier. Look in the fridge in the morning, what to do for dinner, oh, wait, there's leftovers! And I'm able to stash some away in the freezer too.
And what's even better is it's perfect for me for the Weight Watchers plan. At dinner time, we take everything out of the fridge, make ourselves one plate, heat in the microwave, and that's it. Since I only heated what's on my plate, there's no going back for seconds, unless I want to eat it cold or heat up more, and I'm usually satisfied enough that I don't need to think about doing that.
So what's next for the crock pot? Tomorrow would be a good day. Have a whole cut-up chicken in the freezer. Looking for something to do with that. What's your favorite chicken crock pot recipe?
