Favorite Veggies

So being a Weight Watcher, I'm always looking for new ideas on getting those veggies in. Sure, there's the usual green beans, peas, carrots, corn, but I'm always looking for something a little more interesting. And canned veggies are definitely not my thing. I like going to the produce place to see what looks good.

My new favorites are brussel sprouts, rutabagas, and fennel. Love, Love, Love roasted fennel and onions. Yummo. And asparagus is another one, but not steamed asparagus. For me, the only way is to roast it. There is something about roasting veggies that brings out so much more flavor!

Now, when gardening seasons comes, a whole new world opens up. Last year I grew onions for the first time. What a great thing to go out to the garden and yank a softball size onion out of the ground, clean it off and cook it for dinner. Some of our other garden favorites, swiss chard, lettuce, cranberry beans, green beans, and of course, don't forget that Jersey tomato. Also love to grow herbs, basil, basil, basil.... thyme, rosemary, chives, sage and parsley. This year, we want to try growing lima beans.

I can't say that I was ever a kid that hated vegetables. I loved almost all food, hence my issues with food and weight. But my tastes have changed. As a child, I would not touch brussel sprouts or beans and now the only thing I absolutely still don't like are kidney beans.

So bottom line, if you say you've never liked vegetables, take a step and try them anyway. You may find that your tastes have changed and they're not so bad after all....and sooooo good for you!
