Quinoa Recipe Anyone?

So I finally bought some quinoa.  It's been on my "to do" list for a while, but for some reason, keep forgetting when I get to the store.  So this past week's shopping list had it specifically listed at the top.  I got it in the bulk section of the store where you measure out how much you want.  Thank goodness for hubby, or it would have ended up on the floor!

Anyway, now I need a good recipe for it.  So hit me up, will ya!  Really excited and looking forward to trying it.

So today is day 4 of my "new start".  I've been trying to follow the plan (Weight Watchers) as if I was a new member just starting, drinking lots of water, taking my vitamin, counting points, weighing and measuring, getting in lots of fruits and veggies.  I have to say that I FEEL SO MUCH BETTER!  Really!  Day one and two were kind of rough, but today I just feel much better, less bloated, more energy and, yes, I actually feel happier!

Didn't get to the gym yesterday as I had planned.  I wanted to, but because of this medication I'm on, I felt the need to lay my head down on my pillow "just for a few minutes" and I was out for over an hour.  After that, I was just done.  I couldn't pull myself together.  Even after going for a long walk and drinking two cups of coffee, all day long, I just felt like I could go right to sleep.

Today I did get to the gym as planned and got a great workout, then stopped at Subway for lunch.  SUBWAY, I LOVE YOU!  I missed Subway.  For some reason, we just stopped going there.  So it was a nice change for lunch today, 6 inch turkey sub with lots and lots of veggies and treated myself to half a bag of baked chips.

Now it's work, work, work for the rest of the day and a little this evening, leftovers for dinner and some nice sweet watermelon for my evening snack.    I'm going to miss my summer fruit, that's for sure!

  2. Thanks, Marisa. That sounds wonderful. I check it out.

By the way, when is your half-marathon? How's the training going?

Yep, Amanda, I definitely feel so much better when I'm eating right and exercising. Why do we slip sometimes? Because we're human and we love food?

  3. Anything you do with rice you can do with quinoa, just cook it 1 part quinoa, 2 parts liquid. I love it! It is really great!
